2023 Sauvignon Blanc

Sauvignon Blanc is definitely the least favourite variety for our team to harvest, the bunches are small and it takes AGES to fill a bucket. Lucky those small bunches hold heaps of flavour and result in a delicious wine! The wine is made with cool fermentation in stainless steel followed by maturation on lees. It's then bottled early to retain freshness. The wine is light and fresh, and pairs wonderfully with anything from the sea or a crunchy Vietnamese salad.
