Chardonnay is a wonderful malleable grape variety that is a lot of fun to work with in the winery. Fruit characters like which peach are enhanced by fermenting in stainless steel, or texture can be added by allowing small amounts of oxygen to the wine while it is undergoing fermentation, or oak can be added to increase flavour, structure and length. 

We've used all of these winemaking techniques when making this wine, with the aim of producing a Chardonnay that is soft and flavoursome with subtle oak length.
